Buddy's Holiday Chutney

Apples, dried fruit, currants, raisins, lemon peel, cranberries, walnuts, & grated orange rind combine to make a yummy holiday treat with attitude.
- 1lb Granny Smith, Pippin or other firm cooking apples, peeled, cored, & chopped
- grated rind of 1 orange
- 1 cup dried fruit (i.e. pears, apricots, peaches, etc.)
- 1 cup of whole cranberries
- 1/2 cup blackcurrants
- 1/2 cup white raisins
- 1 cup toasted walnuts
- 1/4 cup chopped candied lemon peel
- 2 Tbsp mixed spice (your choice of a combination of ginger, clove, allspice, nutmeg, etc.)
- 1-1/2 cup brown sugar
- 1 cordial of Grand Marnier
Put apples, dried fruit, currants, raisins, lemon peel, cranberries, walnuts, & grated orange rind in a large saucepan. Sir in mixed spice, vinegar & sugar. Heat gently, stirring until all the sugar is dissolved.
Bring to boil, then lower the heat & simmer for 40-45 minutes, stirring occasionally until the mixture is thick.
Watch the chutney carefully towards the end of the cooking time, as it has the tendency to catch on the bottom of the pan...stir frequently at this stage!
In the last 5 minutes of the cooking time, add cordial of Grand Marnier & stir into mixture, then ladle into warm, sterilized jar, cover, & seal. Best if kept for 1 month before using.
