Lightly brown one pkg of bacon in frying skillet. Toss bacon into cooking pot. In a LARGE skillet spread with a very light coating of vegetable oil & brown your choice of one or more of the following: sausage, chorizo, chicken, skirt steak. Add to cooking pot.
Cut & dice one red onion, one white onion, one bundle of scallions, one large garlic clove, toss into the skillet you browned the meat in. Over a medium-low heat, brown onions, ad small can of green chilies, toss in cooking pot when done. Add cayenne, black pepper, white pepper, ground
cumin, hot paprika to taste. Add 1/2 cup of Jack Daniels. Turn flame on to medium under cooking pot.
Cut & dice one green pepper, 1 to 5 jalapeœo peppers (depending on how hot you want it). You may also substitute - or combine - with habaœero, poblano, yellow banana, chili, or any other hot peppers. Toss into cooking pot. It should be at least moderately sizzling by now.
Cut & dice 4 Romano tomatoes. Throw these & 2 one pound cans of sliced tomatoes & their juice into pot, toss 'em in. Wash one can of black beans & one can of pinto beans, add to pot, along with more cumin, cayenne & another 1/2 cup of JD.
Simmer until the Good Shepherd comes to gather his flock.
Garnish with grated sharp cheddar, grated raw onion, sour cream, or what have you. Ketchup is for potato farmers from Sioux City. Serve with hot buttered tortillas & a cold 6-pack of Negra Modello!
